Captain Moonboot's Crispy Fish Tacos with Zesty Lime Crema

🎩 A Word from Captain Moonboot

The Department of International Culinary Relations at World Headquarters has announced an exciting discovery.

Apparently, fish doesn't always have to arrive at the dinner table accompanied by mashed potatoes and a lemon wedge.

Sometimes, you can tuck it into a warm tortilla, add crunchy cabbage, drizzle it with a tangy lime sauce and call the whole thing a taco.

Captain Moonboot considers this an excellent development in modern fish transportation.

The Missus has pointed out that fish tacos have been popular for decades.

The Captain has requested that she stop interfering with his discoveries.

Today's recipe features lightly seasoned, golden-crusted fish tucked into soft tortillas with a colourful cabbage slaw and a creamy lime dressing. It's fresh, satisfying and surprisingly easy to prepare.

Better still, the entire operation takes about 35 minutes.

Toad has expressed considerable interest in the fish but remains deeply suspicious of the tortilla.

👨‍🍳 Instructions

1. Prepare the cabbage slaw

In a medium mixing bowl, combine the shredded green cabbage, red cabbage and grated carrot.

In a small bowl, whisk together the lime juice, olive oil, honey and salt.

Pour the dressing over the vegetables and toss thoroughly.

Add the cilantro if using.

Set aside while preparing the remaining ingredients.

Moonboot Kitchen Observation: The Department of Vegetable Relations has discovered that cabbage becomes considerably more popular when placed inside a taco rather than presented as a large pile beside a pork chop.

Research continues.

2. Make the lime crema

In a small bowl, combine the Greek yogurt, mayonnaise, lime juice, lime zest, garlic powder and cumin.

Whisk until smooth.

Add a teaspoon or two of water if necessary to create a consistency suitable for drizzling.

Season with salt and pepper.

Refrigerate until ready to serve.

For easier application, transfer the crema to a small squeeze bottle.

Captain Moonboot considers squeeze bottles an important technological advancement because they allow ordinary cooks to make their dinners look like they were prepared by people charging considerably more money.

3. Prepare the fish

Pat the fish fillets dry with paper towels.

Cut into strips approximately 1 inch wide and 3 inches long.

Try to keep the pieces relatively uniform so they cook evenly.

In a shallow bowl, combine the flour, cornmeal, smoked paprika, garlic powder, cumin, salt and pepper.

In a second bowl, whisk together the egg and milk.

4. Coat the fish

Dip each piece of fish into the egg mixture, allowing the excess to drip off.

Transfer to the seasoned flour mixture.

Turn gently until coated on all sides.

Place the coated pieces on a plate.

Allow them to rest for approximately 5 minutes while heating the skillet. This helps the coating adhere during cooking.

5. Cook until golden and crispy

Heat 2 tablespoons of oil in a large non-stick skillet over medium heat.

Once the oil is hot, carefully add the fish pieces in a single layer.

Cook for approximately 3–4 minutes per side, depending on thickness.

Turn gently using a spatula or tongs.

The fish should develop a golden, lightly crispy coating.

Cook in batches if necessary, adding a little more oil between batches.

The fish is ready when it reaches an internal temperature of 145°F (63°C) and flakes easily with a fork.

Transfer the cooked pieces to a paper towel-lined plate.

6. Warm the tortillas

Heat a clean, dry skillet over medium heat.

Warm each tortilla for approximately 20–30 seconds per side until soft and pliable.

Alternatively, wrap the tortillas in a slightly damp paper towel and microwave for approximately 20–30 seconds.

Keep warm until ready to assemble.

7. Assemble the tacos

Place two warm tortillas on each serving plate.

Add a generous spoonful of cabbage slaw to each tortilla.

Top with two or three pieces of crispy fish, depending on their size.

Drizzle with the lime crema.

Add sliced avocado, cilantro or jalapeños if desired.

Finish with a squeeze of fresh lime juice.

8. Serve immediately

Serve the tacos while the fish is hot and crispy.

Place extra lime crema, salsa and lime wedges on the table so everyone can customize their own.

Captain Moonboot recommends providing napkins before the first bite.

Experience has demonstrated that tacos, much like Sloppy Joes, do not always respect the boundaries of their intended containers.

🌟 Captain Moonboot's Kitchen Notes

Make it economical: Frozen haddock, cod or pollock works beautifully. Thaw completely in the refrigerator and pat dry before coating.

Use whatever fish is available: Tilapia and other mild white fish can be substituted. Adjust cooking times according to thickness.

Make it lighter: Skip the breading and season the fish with paprika, cumin, garlic powder and a little olive oil. Bake at 425°F (220°C) for approximately 10–15 minutes, or until the fish reaches 145°F (63°C).

Air fryer variation: Lightly spray the coated fish with oil and air fry at 400°F (200°C) for approximately 8–10 minutes, turning halfway through. Cooking time depends on the thickness of the fish.

Make it spicy: Add ¼ teaspoon cayenne pepper to the flour mixture or a few drops of hot sauce to the lime crema.

Make it gluten-free: Substitute gluten-free flour for the all-purpose flour and use certified gluten-free corn tortillas.

Reduce the carbohydrates: Serve the fish and slaw over chopped lettuce instead of tortillas. Use the lime crema as a dressing.

Add fruit: A little diced mango or pineapple makes a delicious topping, particularly with spicy fish.

Make ahead: Prepare the cabbage slaw and lime crema several hours in advance. Refrigerate separately until serving.

Leftovers: Refrigerate cooked fish promptly in an airtight container for up to 3–4 days. Reheat thoroughly in an oven or air fryer to help restore the crispy coating.

Food safety: Keep raw fish refrigerated until preparation, prevent contact between raw fish and ready-to-eat ingredients, and discard any leftover egg or flour coating mixtures that contacted raw fish.

🍽️ Captain Moonboot's Serving Suggestion

For a colourful World HQ supper, arrange two fish tacos on each plate with lime wedges and a little extra cabbage slaw.

Serve with Mexican-style rice, black beans or a simple corn salad.

For a lighter meal, the tacos are satisfying enough on their own.

And here's where the Department of Editorial Direction has finally found an opportunity to reconnect with the cookbook's original mission.

Add a generous spoonful of Recipe #1: Basic Garden Salsa!

The combination of crispy fish, fresh garden salsa, crunchy cabbage and tangy lime crema is outstanding.

Captain Moonboot considers this a major editorial achievement.

After 35 recipes, the cookbook has successfully returned to salsa.

The Department has requested a commemorative plaque.

🚨 WORLD HQ EDITORIAL NOTICE

The Department of International Culinary Relations has officially approved Recipe #35 for inclusion in Making Salsa: Recipes & Other Bad Decisions from Captain Moonboot.

Following extensive testing, the Department has determined that fish can successfully be transported inside a tortilla without requiring a plate, knife or fork.

Captain Moonboot has described the findings as a major advancement in portable seafood technology.

The Missus has pointed out that tacos are generally eaten over a plate anyway.

The Captain has requested that she stop introducing unnecessary complications into an otherwise successful research program.

Meanwhile, Toad has submitted an application for the newly established position of Director of Seafood Quality Assurance.

Her proposed duties include inspecting all fish before cooking, supervising the preparation process and personally disposing of any pieces that fail to meet her exacting standards.

Management has expressed concern that her inspection procedure consists entirely of eating the evidence.

Furthermore, the Department of Canine Safety has reminded everyone that the finished tacos contain ingredients and seasonings unsuitable for dogs, and that fish bones present an additional hazard.

Toad has therefore requested that a small portion of plain, thoroughly cooked, boneless, unseasoned fish be reserved for independent evaluation.

The Missus has agreed that an occasional small piece would be acceptable.

Captain Moonboot has asked whether the same arrangement could be made for him.

The Missus has reminded him that he is preparing eight tacos for four people.

The Captain has quietly withdrawn his request.

Toad, meanwhile, has begun lobbying for the establishment of Taco Tuesday as an official World HQ holiday.

Her proposal includes mandatory fish distribution, extended kitchen supervision hours and the suspension of all restrictions concerning treats.

Management has agreed to review the first two items.

The third has been referred to the Department of Wishful Thinking.

Recipe #35 is officially ready for the World HQ cookbook! 🌮🐟🍋
