Monday morning is no time to begin negotiating with a complicated recipe.
This is what happens when a grilled cheese sandwich and a bacon-and-egg breakfast meet in the kitchen and decide that separate plates are an unnecessary government regulation.
⏱️ Recipe Information
Servings: 2 Sandwiches
Preparation Time: 10 minutes
Cooking Time: 15–20 minutes
Total Time: 25–30 minutes
The cooking time includes frying the bacon, preparing the eggs, assembling the sandwiches and grilling them until the bread is golden and the cheese has melted.
Ingredients
- 4 slices sturdy bread — sourdough, rye or ordinary sandwich bread all work
- 4 slices bacon
- 2 large eggs
- 4 slices old cheddar, or about ¾ cup shredded
- 2 tbsp butter, softened
- 1 tbsp mayonnaise, optional
- 1 tsp Dijon or yellow mustard, optional
- Salt and freshly ground black pepper
- A few thin slices of tomato, optional
Preparation
Cook the bacon until crisp, then set it aside on paper towel.
Pour off most of the bacon fat and cook the eggs in the same skillet. Break the yolks and cook them over medium heat until they're just set but still tender. Season lightly with salt and pepper.
Butter one side of each slice of bread.
On the unbuttered sides, spread a little mayonnaise or mustard if using. Build each sandwich with cheese, one egg, two bacon slices, optional tomato, and another layer of cheese.
Yes, cheese on both sides of the filling. This is structural engineering.
Top with the remaining bread, buttered side facing out.
Cooking
Heat a skillet over medium-low heat.
Cook the sandwiches for about 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese has melted.
If the bread is browning before the cheese melts, turn the heat down. Breakfast is not improved by panic.
Let the sandwiches sit for a minute before cutting them in half.
🌙 Moonboot Modification: The Refrigerator Audit
This sandwich is extremely tolerant of whatever needs using up.
Add leftover ham, cooked sausage, sautéed mushrooms, peppers or onions. A spoonful of leftover salsa is particularly appropriate—although drain off excess liquid first unless you'd like to experience the Structural Failure Modification.
For a little heat, add sliced jalapeño or a few drops of hot sauce.
For something fresher, add spinach or arugula after cooking.
And if there's a lonely leftover baked potato in the refrigerator, slice it thinly, brown the slices in the skillet and put those in too.
At that point it is no longer breakfast.
It is inventory control.
🍳 The Missus Modification
Skip the jalapeños and hot sauce, add a thin tomato slice, and don't announce that you've made the “mild version” as though you've performed an act of extraordinary personal sacrifice.
From the Captain's Log
There are mornings for eggs, toast and bacon arranged neatly on a plate.
Then there are mornings when Captain Moonboot looks at those exact same ingredients and thinks:
“This seems like an unnecessary number of things to carry.”
Put them between bread.
Problem solved.
🚨 WORLD HQ FILING NOTICE: Recipe #6 adds a proper sandwich/breakfast entry to the Moonboot Recipe Bank. 🥪😁
