🎩 A Word from Captain Moonboot
The Department of Appetizers and Unnecessary Snacking at World Headquarters has made a disturbing discovery.
Apparently, not everything served with crackers needs to contain a pound of melted cheese.
Captain Moonboot has requested independent verification.
In the meantime, The Missus has proposed something colourful, inexpensive and surprisingly delicious: a creamy roasted red pepper dip made with white beans, garlic, lemon and a little smoked paprika.
It requires no cooking, takes about ten minutes to prepare and tastes like something served at a fancy restaurant where the portions are suspiciously small.
Captain Moonboot has approved the recipe on the condition that nobody describes it as healthy while he's eating it.
Toad has declined to participate in the taste-testing committee after discovering that the primary ingredient is beans.

🫑 Ingredients
For the dip:
- 1 can (540 mL/19 oz) white kidney beans or cannellini beans, drained and rinsed
- 1 cup roasted red peppers from a jar, well drained
- 2 tablespoons extra-virgin olive oil
- 1½ tablespoons fresh lemon juice
- 1 small garlic clove, minced
- ½ teaspoon smoked paprika
- ¼ teaspoon ground cumin
- ¼ teaspoon salt, or to taste
- ¼ teaspoon freshly ground black pepper
- 1–3 tablespoons cold water, as needed
For the optional garnish:
- 1 tablespoon chopped fresh parsley
- 1 teaspoon olive oil
- A pinch of smoked paprika
- 2 tablespoons crumbled feta cheese
- A few finely diced roasted red peppers
For serving:
- Toasted pita wedges
- Crackers
- Carrot and celery sticks
- Cucumber slices
- Toasted baguette slices
👨🍳 Instructions
1. Prepare the beans
Drain the canned white beans into a colander.
Rinse thoroughly under cold running water to remove excess sodium and the starchy canning liquid.
Allow them to drain.
White beans provide a wonderfully creamy texture without requiring cream cheese, mayonnaise or sour cream.
2. Prepare the roasted peppers
Remove the roasted red peppers from the jar and drain well.
Pat them lightly with paper towels to remove excess moisture.
Roughly chop the peppers into smaller pieces.
Jarred roasted peppers are ideal for this recipe because they're already cooked, tender and full of flavour.
3. Combine the ingredients
Place the drained beans and roasted peppers into a food processor.
Add the olive oil, lemon juice, garlic, smoked paprika, cumin, salt and pepper.
Process for approximately 30 seconds.
Scrape down the sides of the bowl with a spatula.
4. Blend until creamy
Continue processing for another 30–60 seconds until the mixture becomes smooth.
Add cold water, 1 tablespoon at a time, until the dip reaches your preferred consistency.
For a thick spread suitable for sandwiches, use very little water.
For a softer dip suitable for crackers and vegetables, add slightly more.
5. Taste and adjust
Taste the dip and adjust the seasonings.
For additional brightness, add another teaspoon of lemon juice.
For a smokier flavour, add another pinch of smoked paprika.
For a stronger garlic flavour, add a little more minced garlic.
Remember that raw garlic becomes more noticeable as the dip rests.
6. Chill before serving
Transfer the dip to a covered container.
Refrigerate for approximately 20 minutes to allow the flavours to blend.
The dip can also be served immediately if the Department of Impatient Appetizers has declared an emergency.
7. Garnish and serve
Spoon the dip into a shallow serving bowl.
Use the back of a spoon to create a small swirl in the surface.
Drizzle with a little olive oil.
Sprinkle with smoked paprika, parsley and optional crumbled feta cheese.
Serve with crackers, toasted pita wedges or fresh vegetables.
🌟 Captain Moonboot's Kitchen Notes
Make it economical: Canned white beans and jarred roasted peppers are inexpensive pantry ingredients. One batch makes enough dip for several snacks or appetizers.
Roast your own peppers: Cut two large red bell peppers in half, remove the seeds and roast cut-side down at 450°F (230°C) for approximately 20–25 minutes until the skins blister. Cover and cool, then peel away the skins.
Make it spicy: Add a pinch of cayenne pepper, a few drops of hot sauce or half a roasted jalapeño.
Make it extra creamy: Blend in 2 tablespoons of plain Greek yogurt. This produces a slightly tangier dip with additional protein.
Make it dairy-free: The basic recipe contains no dairy. Simply omit the optional feta cheese and yogurt.
Reduce the sodium: Choose no-salt-added canned beans and rinse them thoroughly. Adjust the salt only after tasting.
Use it as a sandwich spread: This dip is excellent on toasted sourdough with sliced turkey, cucumber and lettuce.
Try it with grilled chicken: Spread a spoonful over grilled chicken breasts or use it as a sauce for chicken wraps.
Make ahead: Prepare the dip the day before serving. The flavours improve after several hours in the refrigerator.
Storage: Refrigerate promptly in an airtight container for up to 3–4 days.
Freezing: Freeze in small portions for up to 2 months. Thaw in the refrigerator and stir or briefly blend before serving.
🍽️ Captain Moonboot's Serving Suggestion
For an attractive appetizer platter, arrange a bowl of roasted red pepper dip in the centre of a large plate.
Surround it with toasted pita triangles, cucumber slices, carrot sticks, celery and crackers.
Add a few olives and cubes of cheddar cheese for variety.
This makes an excellent snack for company, an afternoon gathering or those occasions when The Missus announces that supper won't be ready for another hour.
Captain Moonboot recommends keeping a second container in the refrigerator.
Experience has demonstrated that placing an attractive appetizer platter within reach of hungry people can result in its complete disappearance before the guests arrive.
