🎩 A Word from Captain Moonboot
The Department of International Culinary Relations at World HQ has announced an exciting development.
Apparently, combining chicken meatballs, pineapple, colourful peppers and a sticky sweet-and-sour sauce produces something remarkably delicious.
Captain Moonboot immediately approved the experiment.
The Missus was pleased to discover that the entire operation could be accomplished using ordinary grocery-store ingredients without requiring a second mortgage.
Today's creation features tender, juicy chicken meatballs coated in a glossy pineapple-ginger sauce, with sweet bell peppers and onions, served over fluffy rice.
It's colourful, economical, and considerably better than another evening of staring into the refrigerator waiting for inspiration.
Toad has requested clarification concerning the decision to put fruit in the meat department.
Her Legal Beagle is reviewing the matter.

👨🍳 Instructions
1. Prepare the oven
Preheat your oven to 400°F (200°C).
Line a large baking sheet with parchment paper.
Lightly coat the parchment with cooking spray.
2. Make the chicken meatballs
In a large mixing bowl, combine the ground chicken, egg, breadcrumbs, milk, green onions, garlic, ginger, onion powder, salt and pepper.
Mix gently until everything is incorporated.
Avoid overmixing, which can make the meatballs tough.
Using slightly damp hands, shape the mixture into approximately 20 meatballs, each about 1½ inches in diameter.
Arrange them evenly on the prepared baking sheet.
Moonboot Kitchen Observation: The Department of Meatball Engineering has determined that uniform meatball dimensions contribute to consistent cooking.
Captain Moonboot has suggested measuring each meatball with a ruler.
The Missus has suggested he find something useful to do.
3. Bake the meatballs
Bake for approximately 18–22 minutes, until lightly golden and the internal temperature reaches 165°F (74°C).
Ground chicken must be thoroughly cooked.
Remove from the oven and set aside while preparing the sauce.
4. Prepare the pineapple
Drain the canned pineapple, reserving ½ cup of juice.
Set the pineapple chunks aside.
If the can doesn't provide quite enough juice, add water to make ½ cup.
5. Mix the sweet-and-sour sauce
In a medium bowl, whisk together the pineapple juice, ketchup, soy sauce, rice vinegar, optional honey, ginger and sesame oil.
In a separate small bowl, stir the cornstarch into 2 tablespoons of cold water until smooth.
Keep the cornstarch mixture separate until needed.
Captain Moonboot's Culinary Discovery: Cornstarch apparently has the ability to transform a perfectly ordinary collection of liquids into something resembling a respectable restaurant sauce.
The Department of Culinary Chemistry has requested additional funding.
6. Cook the vegetables
Heat the vegetable oil in a large skillet over medium-high heat.
Add the red pepper, green pepper and onion.
Cook for approximately 5–6 minutes, stirring occasionally.
The vegetables should begin to soften while retaining a little crunch.
Add the pineapple chunks and cook for another 2 minutes.
7. Make the sauce
Pour the prepared pineapple sauce into the skillet.
Bring to a gentle simmer.
Stir the cornstarch mixture again, then slowly pour it into the skillet while stirring.
Cook for approximately 1–2 minutes, until the sauce thickens and becomes glossy.
If the sauce becomes too thick, add a tablespoon or two of water.
Taste and adjust the balance of sweetness and acidity.
For a tangier sauce, add another teaspoon of rice vinegar.
For additional sweetness, add a little more honey.
8. Combine everything
Add the cooked chicken meatballs to the skillet.
Gently toss until the meatballs are completely coated in the pineapple sauce.
Reduce the heat to low and simmer for approximately 3–4 minutes, allowing the flavours to combine.
Stir carefully to avoid breaking the meatballs.
9. Serve
Spoon fluffy cooked rice into four serving bowls.
Top with generous portions of pineapple chicken meatballs, vegetables and sauce.
Garnish with chopped green onions and toasted sesame seeds if desired.
Serve immediately.
🌟 Captain Moonboot's Kitchen Notes
Make it economical: Ground chicken is often available in family-sized packages. Buy when it's on sale and freeze individual portions for future meals.
Use ground turkey: Ground turkey works equally well. Cook the meatballs to an internal temperature of 165°F (74°C).
Make it spicy: Add ½ teaspoon crushed red pepper flakes or a teaspoon of sriracha to the sauce.
Reduce the sweetness: Omit the optional honey. The pineapple juice and ketchup already provide sweetness.
Add vegetables: Broccoli florets, sliced carrots or snap peas are excellent additions.
Try brown rice: Serve over brown rice for additional fibre.
Use fresh pineapple: Fresh pineapple works beautifully. Substitute approximately 1 cup of fresh chunks and use unsweetened pineapple juice for the sauce.
Make it gluten-free: Use gluten-free breadcrumbs and certified gluten-free tamari instead of regular soy sauce.
Make ahead: Prepare and bake the meatballs a day in advance. Refrigerate promptly and combine with freshly prepared sauce when ready to serve.
Storage: Refrigerate leftovers in airtight containers for up to 3–4 days.
Freezing: The cooked meatballs freeze well for up to 3 months for best quality. The finished dish can also be frozen, although the peppers may soften after thawing.
Reheating: Reheat gently in a covered skillet or microwave until thoroughly heated to 165°F (74°C). Add a splash of water if the sauce has thickened.
🍽️ Captain Moonboot's Serving Suggestion
For a colourful World HQ supper, serve the meatballs over steaming jasmine rice with plenty of pineapple sauce.
A side of steamed broccoli or green beans makes an excellent accompaniment.
For something different, tuck the meatballs and vegetables into warm flatbread for a sweet-and-savoury wrap.
Leftover meatballs can also be chopped and added to fried rice the following day.
Captain Moonboot considers this a particularly impressive example of culinary recycling.
The Missus has pointed out that using leftovers is hardly a revolutionary concept.
The Department of Food Innovation has requested that she stop revealing trade secrets.
🚨 WORLD HQ EDITORIAL NOTICE
The Department of International Culinary Relations has officially approved Recipe #42 for inclusion in Making Salsa: Recipes & Other Bad Decisions from Captain Moonboot.
Following extensive research, management has concluded that pineapple and chicken can coexist peacefully in the same frying pan.
Captain Moonboot has described the findings as an important diplomatic breakthrough.
The Missus has suggested that the Captain may be spending too much time conducting imaginary departmental meetings.
Meanwhile, Toad has filed a formal grievance.
Her complaint alleges that management deliberately disguised perfectly good chicken beneath a suspicious coating of fruit and vegetables.
The Legal Beagle has requested immediate disclosure of all ingredients, preparation procedures and records of previous meatball-related incidents.
Lucy has volunteered to assist with the investigation.
The Legal Beagle has objected, citing her previous attempts to destroy evidence by pushing documents off the desk.
Management has offered Toad a small portion of plain, thoroughly cooked, unseasoned chicken, prepared separately from the onions, garlic and sauce.
Toad has rejected the offer.
Apparently, she is now demanding a seat on the Board of Directors and unrestricted access to the refrigerator.
The Captain has informed her that World HQ doesn't actually have a Board of Directors.
Her lawyer has responded that this represents an additional corporate governance concern.
The Missus has suggested that everybody simply sit down and eat their supper.
The Captain has instructed the Department of Legal Affairs to stop answering the telephone.
Recipe #42 is officially ready for the World HQ cookbook! 🍍🍗🍚
