Saturday at World HQ seems like an appropriate time to abandon yesterday's responsible vegetables and put cheese, bacon and jalapeños into a potato. This is technically cooking, although its primary nutritional objective is happiness.
⏱️ Recipe Information
Servings: 4
Preparation Time: 15 minutes
Baking Time: 60–75 minutes
Cooling Time: 10 minutes (before scooping)
Total Time: Approximately 85–100 minutes
The baking time includes baking the potatoes until tender, then returning the filled potato boats to the oven until the cheese is melted and golden.
Ingredients
- 4 medium baking potatoes
- 6 slices bacon, cooked crisp and crumbled
- 1½ cups shredded old cheddar
- 1–2 jalapeños, finely chopped
- 3 green onions, sliced
- ½ cup sour cream
- 2 tbsp butter
- Salt and black pepper
- Optional: ½ tsp garlic powder
- Extra sour cream for serving
Method: Heat the oven to 400°F (205°C). Pierce the potatoes with a fork and bake for about 50–60 minutes, until tender. Let them cool just enough that handling them doesn't become another Captain Moonboot medical incident.
Cut each potato lengthwise and scoop most of the potato into a bowl, leaving enough around the skin to keep the shell sturdy.
Mash the potato with the butter and sour cream. Stir in about two-thirds of the cheddar, bacon, jalapeño and green onion. Season with salt, pepper and garlic powder if using.
Spoon the mixture generously back into the potato shells. Top with the remaining cheddar and bacon, then bake for another 15 minutes, followed by a minute or two under the broiler if you want nicely browned cheese.
Add the remaining green onion and serve with sour cream.
Moonboot Modification: Keep some jalapeño out of Margaret's potatoes and pile the difference onto yours. This allows two people to eat the same supper while maintaining entirely different definitions of the phrase “It's not that hot.”
These work as a side dish, but two boats and a simple salad can easily become supper. Leftovers also reheat nicely in the oven or air fryer.
WORLD HQ FILING NOTICE: Recipe #3 belongs in the Moonboot Recipe Bank inside the Captain Moonboot Project. We're remembering the new office already. 😁🥔
