Captain Moonboot's Sheet-Pan Sausage & Vegetables

After yesterday's respectable garden salsa, Captain Moonboot requires something that qualifies as an actual supper. This one has the added advantage that most of the work consists of cutting things up, throwing them on a pan and leaving them alone—an approach to cooking that World HQ strongly endorses.

⏱️ Recipe Information

Servings: 4
Preparation Time: 15 minutes
Baking Time: 35–40 minutes
Total Time: 50–55 minutes

The baking time includes giving the potatoes a head start before adding the sausage and remaining vegetables. Everything finishes together on one sheet pan.

Ingredients

  • 4 Italian sausages, mild or hot
  • 1 lb baby potatoes, halved
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 medium onion, cut into wedges
  • 2 carrots, sliced into thick coins
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt and black pepper
  • Optional: grated Parmesan or shredded mozzarella

Method: Heat the oven to 425°F (220°C). Toss the potatoes and carrots with about half the oil, seasoning and a little salt and pepper. Spread them on a large baking sheet and give them a 15-minute head start.

Add the peppers, onion and garlic. Drizzle with the remaining oil and toss everything together. Nestle the sausages among the vegetables and return the pan to the oven for about 25–30 minutes, turning the sausages once, until they're browned and cooked through to 160°F/71°C for pork or beef sausage.

If desired, sprinkle Parmesan over everything for the last few minutes. Serve as-is, with crusty bread, or spoon the sausage and vegetables over rice.

Moonboot Modification: Slice the cooked sausages into chunks before serving and toss everything together. This creates the appearance that considerably more culinary planning took place than actually did.

And leftovers have an obvious second life: chop everything smaller, fry it in a skillet the next morning and put a couple of eggs on top. That transforms last night's supper into tomorrow's breakfast, which Captain Moonboot Accounting recognizes as a 50% reduction in cooking-related labour.

WORLD HQ FILING NOTICE: This one's destined for the Moonboot Recipe Bank in the Captain Moonboot Project—exactly the new office we're trying to remember exists. 😁
