🎩 A Word from Captain Moonboot
The Department of Breakfast Operations at World Headquarters has identified a recurring problem: Captain Moonboot enjoys a good muffin with his morning coffee, but apparently purchasing them individually from a bakery is not considered sound financial management.
The Missus has suggested baking a dozen at home.
Captain Moonboot, recognizing an opportunity to combine economics, domestic harmony and something delicious, has agreed.
These cranberry-orange oatmeal muffins are soft, moist and packed with bright citrus flavour, tart cranberries and hearty rolled oats. They're perfect for breakfast, afternoon coffee or those mysterious occasions when someone wanders into the kitchen claiming they're not particularly hungry.
Toad has already volunteered to supervise the operation, although her previous experience with baked goods has raised legitimate concerns about inventory control.
⏱️ Recipe Information
Servings: 12 muffins
Preparation Time: 20 minutes (including soaking the oats)
Baking Time: 20–24 minutes
Cooling Time: 5 minutes
Total Time: Approximately 45–50 minutes
🧁 Ingredients
For the muffins:
- 1 cup old-fashioned rolled oats
- ¾ cup milk
- 1¼ cups all-purpose flour
- ⅓ cup packed brown sugar
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 large egg
- ⅓ cup vegetable or canola oil
- ⅓ cup plain yogurt
- 2 tablespoons fresh orange juice
- 1 tablespoon finely grated orange zest
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cranberries, roughly chopped
For the optional orange glaze:
- ½ cup icing sugar
- 1–2 tablespoons fresh orange juice
- ½ teaspoon finely grated orange zest
👨🍳 Instructions
1. Prepare the oven and muffin pan
Preheat your oven to 375°F (190°C).
Line a standard 12-cup muffin pan with paper liners or lightly grease each cup.
2. Soften the oats
In a medium bowl, combine the rolled oats and milk.
Allow the mixture to stand for approximately 10 minutes while preparing the remaining ingredients.
This softens the oats and helps create a moist, tender muffin.
3. Combine the dry ingredients
In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon and salt.
Break up any lumps of brown sugar.
Set aside.
4. Mix the wet ingredients
Add the egg, vegetable oil, yogurt, orange juice, orange zest and vanilla extract to the softened oat mixture.
Whisk until everything is well combined.
The fresh orange zest is particularly important because it provides much of the bright citrus flavour.
5. Make the muffin batter
Pour the wet ingredients into the bowl containing the dry ingredients.
Stir gently with a wooden spoon or spatula until just combined.
A few small lumps are perfectly acceptable.
Avoid overmixing, which can produce dense, tough muffins.
Gently fold in the chopped cranberries.
If using frozen cranberries, add them directly from the freezer without thawing.
6. Fill the muffin cups
Divide the batter evenly among the 12 prepared muffin cups, filling each approximately three-quarters full.
For a slightly crunchy topping, sprinkle a few additional rolled oats over each muffin before baking.
7. Bake until golden
Bake for 20–24 minutes, until the muffins are lightly golden and a toothpick inserted into the centre comes out clean or with a few moist crumbs.
The tops should spring back gently when touched.
8. Cool the muffins
Allow the muffins to cool in the pan for approximately 5 minutes.
Transfer them to a wire rack to finish cooling.
They're particularly delicious served slightly warm.
9. Add the optional orange glaze
For a sweeter bakery-style finish, whisk together the icing sugar, orange juice and orange zest until smooth.
Adjust the amount of orange juice until the glaze is thin enough to drizzle.
Once the muffins have cooled, drizzle a small amount over each one.
The glaze is entirely optional. These muffins have plenty of flavour without it.
🌟 Captain Moonboot's Kitchen Notes
Make them a little healthier: Substitute whole-wheat flour for half of the all-purpose flour. The muffins will be slightly denser but will contain more fibre.
Reduce the sugar: Use ¼ cup brown sugar instead of ⅓ cup and skip the optional glaze. The muffins will be pleasantly tart, allowing the orange flavour to shine through.
Fresh or frozen cranberries: Both work beautifully. Frozen cranberries are particularly convenient because they can be kept on hand for baking throughout the year.
Try dried cranberries: Substitute ¾ cup dried cranberries for the fresh cranberries. Because dried cranberries are usually sweetened, consider reducing the brown sugar slightly.
Add some crunch: Stir ½ cup chopped walnuts or pecans into the batter for additional texture.
Make them ahead: Bake a batch on Sunday and enjoy them throughout the week.
Storage: Keep the muffins in an airtight container at room temperature for up to 2 days, or refrigerate for approximately 5 days.
Freezing: Wrap individual muffins and freeze for up to 3 months. Thaw at room temperature or warm briefly in the microwave.
Serving suggestion: Split a warm muffin in half and spread with a little butter or cream cheese. Serve alongside a fresh cup of coffee.
🍽️ Captain Moonboot's Serving Suggestion
These muffins make a wonderful addition to a leisurely weekend breakfast.
Serve with scrambled eggs, fresh fruit and coffee for a satisfying morning meal.
They're also excellent packed into a lunch or enjoyed as an afternoon snack.
For a special treat, warm one slightly and add a small pat of butter.
Captain Moonboot recommends preparing two muffins whenever The Missus asks whether he'd like something with his coffee.
Experience has demonstrated that answering "just one" frequently leads to unnecessary return trips to the kitchen.
🚨 WORLD HQ EDITORIAL NOTICE
The Department of Breakfast Economics has officially approved Recipe #26 for inclusion in Making Salsa: Recipes & Other Bad Decisions from Captain Moonboot.
An internal financial review has determined that baking twelve muffins at home is considerably less expensive than purchasing twelve individual muffins from a coffee shop.
Captain Moonboot has described the savings as substantial.
The Missus has suggested that the money saved could be put toward groceries.
Captain Moonboot has suggested purchasing additional coffee.
Negotiations remain ongoing.
Meanwhile, Toad has submitted a formal request to establish a Muffin Inspection Division.
Her proposal includes mandatory inspection of all twelve muffins, unrestricted access to the cooling rack and the authority to confiscate any baked goods deemed suspicious.
Management has rejected the proposal following a review of the infamous Waffle Incident.
Toad maintains that the incident has been grossly misrepresented.
According to her official statement, the three-quarters of an Eggo waffle discovered in her possession was merely being transported to a more secure location.
No charges were laid.
However, World Headquarters has ordered that all cooling racks remain at least three feet above Chihuahua level.
Recipe #26 is officially ready for the World HQ cookbook! 🍊🧁🍁
