Captain Moonboot's Sticky Honey-Mustard Chicken Drumsticks

🎩 A Word from Captain Moonboot

The Department of Poultry Procurement at World Headquarters has discovered something remarkable: chicken drumsticks are often considerably cheaper than chicken breasts, despite coming from the very same bird.

Captain Moonboot has requested an investigation into this apparent accounting irregularity.

Meanwhile, The Missus has suggested that instead of investigating the chicken, he might consider cooking it.

An excellent suggestion.

These oven-baked chicken drumsticks are coated in a sticky honey-mustard glaze with just enough garlic, paprika and tangy vinegar to make things interesting. They're inexpensive, easy to prepare and require very little attention once they're in the oven.

Best of all, there's no deep-frying, complicated breading or expensive ingredients involved.

Toad has expressed considerable enthusiasm for the project, although her application to supervise the chicken preparation has been denied on sanitary grounds.

⏱️ Recipe Information

Servings: 4 (approximately 2 drumsticks per person)
Preparation Time: 10 minutes
Cooking Time: 40–45 minutes
Resting Time: 5 minutes
Total Time: Approximately 55–60 minutes

🥘 Ingredients

For the chicken:

  • 8 chicken drumsticks (approximately 2–2½ pounds)
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon salt

For the honey-mustard glaze:

  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole-grain mustard (or additional Dijon)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon low-sodium soy sauce
  • 2 cloves garlic, minced
  • ½ teaspoon smoked paprika
  • 1 teaspoon olive oil

Optional garnish:

  • Fresh chopped parsley
  • Thinly sliced green onions
  • Lemon wedges

👨‍🍳 Instructions

1. Prepare the oven

Preheat your oven to 400°F (200°C).

Line a large rimmed baking sheet with parchment paper or aluminum foil for easier cleanup.

Lightly grease the surface to prevent sticking.

2. Season the chicken

Pat the drumsticks dry with paper towels.

Place them in a large bowl and drizzle with 1 tablespoon of olive oil.

Sprinkle with smoked paprika, garlic powder, onion powder, salt and pepper.

Toss until evenly coated.

Arrange the drumsticks on the prepared baking sheet, leaving a little space between each piece.

3. Prepare the glaze

In a small bowl, whisk together the honey, Dijon mustard, whole-grain mustard, apple cider vinegar, soy sauce, minced garlic, smoked paprika and olive oil.

Mix until smooth.

Set aside approximately one-third of the glaze in a separate clean bowl for finishing. Keep this portion away from the raw chicken.

4. Begin roasting

Place the chicken in the preheated oven.

Roast for approximately 20 minutes, allowing the skin to begin browning and the fat to render.

5. Apply the glaze

Remove the baking sheet from the oven.

Brush the drumsticks generously with the larger portion of honey-mustard glaze.

Turn the drumsticks and coat the opposite sides.

Return to the oven and continue roasting for approximately 15 minutes.

6. Finish cooking

Turn the drumsticks once more and brush with any remaining glaze from the portion used on the chicken.

Roast for another 5–10 minutes, until the chicken is golden, sticky and cooked through.

The thickest part of each drumstick should reach an internal temperature of at least 165°F (74°C), measured without touching the bone.

For especially tender dark meat, a temperature around 175–185°F (79–85°C) is often preferable.

If the glaze begins darkening too quickly, loosely cover the chicken with foil.

7. Rest and serve

Remove the chicken from the oven and allow it to rest for approximately 5 minutes.

Brush lightly with the reserved clean glaze for extra shine and flavour.

Sprinkle with fresh parsley or green onions, if desired.

Serve immediately.

🌟 Captain Moonboot's Kitchen Notes

Make it economical: Chicken drumsticks frequently go on sale in family-sized packages. Purchase extra and freeze them in meal-sized portions.

Try chicken thighs: Bone-in, skin-on chicken thighs work beautifully with the same glaze. Adjust the cooking time according to their size and check the internal temperature.

Reduce the sweetness: Use 2 tablespoons of honey instead of 3 and increase the Dijon mustard slightly. The glaze will be tangier and contain less added sugar.

Make it spicy: Add ¼ teaspoon cayenne pepper or a teaspoon of your favourite hot sauce to the glaze.

Get crispier skin: For a crispier finish, place the chicken under the broiler for 1–2 minutes after roasting. Watch carefully because the honey can burn quickly.

Air fryer variation: Cook seasoned drumsticks at 375°F (190°C) for approximately 20–25 minutes, turning halfway through. Apply the glaze during the final 5–7 minutes and continue cooking until the chicken reaches a safe internal temperature. Cooking times vary by air fryer.

Leftovers: Refrigerate promptly in an airtight container for 3–4 days. Reheat thoroughly in the oven or air fryer.

Freezing: Cooked drumsticks can be frozen for approximately 2–3 months. Thaw overnight in the refrigerator before reheating.

🍽️ Captain Moonboot's Serving Suggestion

For a proper World HQ supper, serve these sticky drumsticks with roasted potato wedges and a generous helping of homemade coleslaw.

The cool, crunchy cabbage provides a refreshing contrast to the sweet and tangy chicken.

Alternatively, serve with rice and steamed green beans for a lighter meal.

Captain Moonboot recommends providing plenty of napkins, since the glaze has demonstrated a remarkable ability to migrate from chicken drumsticks to fingers, shirt sleeves and occasionally the furniture.

🚨 WORLD HQ EDITORIAL NOTICE

The Department of Poultry Economics has officially approved Recipe #27 for inclusion in Making Salsa: Recipes & Other Bad Decisions from Captain Moonboot.

Following a detailed cost analysis, Captain Moonboot has determined that purchasing chicken drumsticks instead of chicken breasts can result in considerable savings.

The Missus has suggested using these savings to purchase additional vegetables.

Captain Moonboot has proposed purchasing more chicken.

The matter has been referred to the Department of Domestic Negotiations.

Meanwhile, Toad has submitted an application for the newly created position of Director of Chicken Bone Disposal.

Her proposal promises rapid collection, efficient processing and absolutely no questions asked.

Management has rejected the application after consulting the Department of Canine Safety, which confirmed that cooked chicken bones can splinter and cause serious injuries.

Toad has subsequently revised her proposal, requesting boneless chicken instead.

The Department has acknowledged the improvement but remains concerned about her qualifications.

After all, this is the same employee who once relocated three-quarters of a waffle without authorization.

Recipe #27 is officially ready for the World HQ cookbook! 🍗🍯
