Captain Moonboot's Honey-Garlic Glazed Chicken Wings

There are few things in life more satisfying than a plate of sticky, golden chicken wings.

Unfortunately, ordering them from a restaurant now requires approximately the same financial planning as purchasing a used automobile.

At World HQ, we've developed a more economical approach.

We buy the wings, throw them in the oven, make a ridiculously simple honey-garlic sauce, and eat them at home.

No delivery charge. No mysterious service fee. No suggested 25% gratuity.

And most importantly, nobody judges you for licking your fingers.

Well, The Missus might. But that's an entirely different department.

⏱️ Recipe Information

Servings: 4 as a main course, or 6 as an appetizer
Preparation Time: 15 minutes
Baking Time: 40–45 minutes
Total Time: Approximately 60 minutes, including glazing and resting

πŸ›’ Ingredients

For the Crispy Chicken Wings

  • 2 lb (900 g) chicken wings, split into flats and drumettes
  • 1 tbsp baking powder (aluminum-free preferred)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Β½ tsp onion powder
  • Β½ tsp salt
  • Β½ tsp freshly ground black pepper
  • 1 tbsp vegetable oil

Important: Use baking powder, not baking soda. These are two entirely different products, and confusing them is an excellent way to turn supper into a chemistry experiment.

For the Honey-Garlic Glaze

  • β…“ cup honey
  • ΒΌ cup low-sodium soy sauce
  • 3 cloves garlic, finely minced
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp freshly grated ginger (optional)
  • 1 tsp sesame oil (optional)
  • 1 tsp cornstarch mixed with 1 tbsp cold water

Optional Garnishes

  • 1 green onion, thinly sliced
  • 1 tsp sesame seeds
  • Pinch of red pepper flakes

πŸ— Step 1: Prepare the Wings

Preheat your oven to 425Β°F (220Β°C).

Line a large baking sheet with aluminum foil and place an oven-safe wire rack on top.

Lightly grease the rack.

Pat the chicken wings thoroughly dry with paper towels.

This is one of the secrets to crispy baked wings.

Moisture is the enemy of crispiness.

Captain Moonboot has noticed this principle also applies to toast, potato chips and important documents left outside during a thunderstorm.

Place the wings in a large bowl.

Add the vegetable oil, baking powder, garlic powder, smoked paprika, onion powder, salt and pepper.

Toss until the wings are evenly coated.

Arrange them on the wire rack in a single layer, leaving a little space between each piece.

πŸ”₯ Step 2: Bake Until Crispy

Place the baking sheet on the middle rack of the oven.

Bake for 40–45 minutes, turning the wings halfway through.

They should become beautifully golden brown with crispy skin.

Check that the thickest part of the meat reaches at least 165Β°F (74Β°C) using a meat thermometer, avoiding the bone.

For especially tender wings, cooking them a little beyond that minimum temperature is perfectly fine.

Moonboot Kitchen Observation: There is absolutely no need to deep-fry these wings. The oven does an excellent job, and you won't be left wondering what to do with two litres of used cooking oil.

World HQ considers this a significant administrative improvement.

🍯 Step 3: Make the Honey-Garlic Glaze

While the wings are baking, combine the honey, soy sauce, garlic, brown sugar, vinegar, ginger and sesame oil in a small saucepan.

Heat over medium-low heat, stirring occasionally.

Bring to a gentle simmer and cook for approximately 3–4 minutes.

Stir the cornstarch into the tablespoon of cold water until smooth.

Slowly pour this mixture into the simmering sauce, stirring constantly.

Continue cooking for another 1–2 minutes, until the sauce thickens enough to coat the back of a spoon.

Remove from the heat.

The sauce should be glossy, sticky and wonderfully fragrant.

If it becomes too thick, add a tablespoon of water.

If it's too thin, simmer it for another minute.

At this stage, Captain Moonboot recommends tasting the sauce.

For quality-control purposes.

Possibly twice.

πŸ₯£ Step 4: The Great Wing Glazing

Transfer the cooked wings to a large clean mixing bowl.

Pour approximately two-thirds of the warm honey-garlic glaze over the wings.

Toss gently until every wing is beautifully coated.

Arrange them on a serving platter.

Drizzle the remaining glaze over the top.

Sprinkle with sliced green onion, sesame seeds or red pepper flakes if desired.

Allow the wings to rest for about 5 minutes before serving.

This gives the glaze a chance to cling to the wings.

It also gives everyone time to locate sufficient napkins.

πŸŒ™ Moonboot Modifications

🌢️ The Sweet-and-Spicy Bad Decision

Add 1–2 teaspoons of sriracha or your favourite hot sauce to the honey-garlic glaze.

For additional heat, sprinkle red pepper flakes over the finished wings.

Start cautiously.

Captain Moonboot believes food should occasionally be exciting, but not necessarily require emergency intervention.

🍁 The Canadian Modification

Replace half the honey with pure maple syrup.

The result is a slightly different but equally delicious maple-garlic glaze.

This variation has been approved by the World HQ Department of Canadian Content.

No government funding was requested.

πŸ‹ The Lemon-Garlic Modification

Replace the rice vinegar with fresh lemon juice and add Β½ teaspoon finely grated lemon zest.

The result is a brighter, tangier sauce that works particularly well with chicken.

πŸ₯¦ The Boneless Alternative

Not everybody enjoys navigating a plate full of chicken bones.

Cut boneless chicken thighs into large bite-sized pieces, season them as directed, and bake at 425Β°F (220Β°C) for approximately 20–25 minutes, or until they reach 165Β°F (74Β°C).

Toss with the honey-garlic glaze.

You now have sticky honey-garlic chicken bites.

World HQ considers this a perfectly legitimate variation, although purists may file a complaint with the Wing Classification Board.

🍟 What Goes with It?

These wings are excellent with oven-baked potato wedges, coleslaw, carrot and celery sticks, or a simple garden salad.

For a complete supper, serve them over steamed rice with broccoli or green beans.

The extra glaze is particularly good drizzled over the rice.

And if you're serving these during a hockey game, consider doubling the recipe.

Chicken wings have an unusual ability to disappear considerably faster than the average person anticipates.

🧊 Storage and Leftovers

Refrigerate leftover wings promptly in an airtight container for up to 3–4 days.

Reheat in a 350Β°F (175Β°C) oven for approximately 10–15 minutes, or until thoroughly heated.

An air fryer also works well for reheating, although the glaze may become slightly sticky.

Leftover wings can be frozen for up to 2 months for best quality.

πŸ“– From the Captain's Log

I've always been fascinated by the economics of chicken wings.

There was a time when wings were considered one of the least desirable parts of a chicken.

People practically gave them away.

Then somebody discovered you could fry them, cover them in sauce, serve them with a few celery sticks, and charge an astonishing amount of money.

Suddenly, the least valuable part of the chicken became one of its most profitable assets.

This is an extraordinary business model.

Imagine applying the same principle to automobiles.

You purchase a car, remove the windshield wipers, cover them in barbecue sauce, and sell them separately for $18.

Of course, the government would probably require a licence.

And a windshield-wiper sauce inspection.

And a mandatory training course.

At World HQ, we've decided to avoid the regulatory complications.

We're sticking with chicken.

Besides, I've already got enough experience dealing with government departments that don't understand the difference between a wing and a prayer. πŸ˜πŸ—
