Captain Moonboot's Roasted Butternut Squash & Apple Soup

Captain Moonboot's Roasted Butternut Squash & Apple Soup

Β

🎩 A Word from Captain Moonboot

Autumn has arrived at World Headquarters, and the Department of Seasonal Vegetables has issued its annual directive: find something useful to do with squash.

Captain Moonboot initially suggested using one as a doorstop, but The Missus pointed out that squash is actually edible.

After considerable negotiations, a compromise was reached. Roast it, add some apples, turn everything into a delicious creamy soup, and pretend this was the plan all along.

Toad has expressed disappointment that the recipe contains neither bacon nor cheese. Her formal complaint remains under review.

⏱️ Recipe Information

Servings: 4–6
Preparation Time: 15 minutes
Roasting Time: 30–35 minutes
Cooking Time: 10 minutes
Total Time: Approximately 60 minutes

πŸ₯£ Ingredients

  • 1 medium butternut squash (approximately 2 pounds), peeled, seeded and cubed
  • 2 medium apples, peeled, cored and chopped
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • Β½ cup heavy cream or coconut milk
  • 1 teaspoon dried thyme
  • ΒΌ teaspoon ground cinnamon
  • ΒΌ teaspoon ground nutmeg
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon maple syrup (optional)
  • Roasted pumpkin seeds or fresh parsley, for garnish

πŸ‘¨β€πŸ³ Instructions

1. Prepare the vegetables

Preheat your oven to 425Β°F (220Β°C).

Place the cubed butternut squash, chopped apples and onion on a large baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.

Toss everything together until evenly coated.

2. Roast until golden

Roast for 30–35 minutes, turning halfway through, until the squash is tender and the edges begin to caramelize.

The roasting process brings out the natural sweetness of the squash and apples.

3. Build the soup

Transfer the roasted vegetables to a large soup pot.

Add the minced garlic, broth, thyme, cinnamon and nutmeg.

Bring to a gentle simmer and cook for approximately 10 minutes.

4. Blend until smooth

Using an immersion blender, carefully puree the soup until smooth and creamy.

Alternatively, allow the mixture to cool somewhat before blending in small batches in a countertop blender. Follow the manufacturer's instructions for hot liquids.

5. Add the finishing touches

Stir in the cream or coconut milk.

Taste and adjust the salt and pepper. If you'd prefer a slightly sweeter soup, add the optional tablespoon of maple syrup.

Warm gently without boiling.

6. Serve and enjoy

Ladle into bowls and garnish with roasted pumpkin seeds, chopped parsley or a small swirl of cream.

Serve with warm crusty bread or a grilled cheese sandwich.

🌟 Captain Moonboot's Kitchen Notes

Make it lighter: Substitute evaporated milk for the heavy cream, or omit the cream entirely. The roasted squash already provides a wonderfully smooth texture.

Add a little heat: A pinch of cayenne pepper or smoked paprika adds a pleasant kick without overpowering the sweetness.

Make ahead: Refrigerate in a covered container for up to 3–4 days, or freeze in individual portions for approximately 3 months.

Save some time: Most grocery stores carry peeled and cubed butternut squash, eliminating the most troublesome part of the preparation.

🚨 WORLD HQ EDITORIAL NOTICE

The Department of Seasonal Nutrition has officially approved this recipe as a practical way to consume vegetables without making the experience unnecessarily unpleasant.

Captain Moonboot recommends serving it with a thick grilled cheese sandwich, preferably one containing enough cheddar to qualify as a structural engineering project.

The Missus has suggested that soup and a small sandwich would be sufficient.

Captain Moonboot has requested clarification regarding the word small.

Meanwhile, Toad has taken up her usual position beneath the dining table, patiently awaiting the first recorded incident of airborne grilled cheese.
