Captain Moonboot's Sweet & Tangy Apple-Cabbage Coleslaw

🎩 A Word from Captain Moonboot

The Department of Vegetable Relations at World Headquarters has received another complaint from The Missus.

Apparently, serving potatoes with every meal does not constitute a balanced vegetable program.

Captain Moonboot has pointed out that potatoes are vegetables.

The Missus has pointed out that this argument is getting old.

In the interest of domestic harmony, the Captain has authorized the development of a proper homemade coleslaw featuring crisp cabbage, sweet apples, shredded carrots and a creamy, tangy dressing.

It's inexpensive, requires absolutely no cooking, and makes a wonderful accompaniment to pulled pork, chicken, burgers or sandwiches.

Toad has expressed interest in the apples but remains deeply suspicious of cabbage.

⏱️ Recipe Information

Servings: 6–8 side-dish portions
Preparation Time: 15 minutes
Cooking Time: None required
Chilling Time: 30 minutes
Total Time: 45 minutes

🥬 Ingredients

For the coleslaw:

  • 4 cups finely shredded green cabbage

  • 1 cup finely shredded red cabbage

  • 1 large carrot, peeled and grated

  • 1 crisp apple (Honeycrisp, Gala or Granny Smith), cut into thin matchsticks

  • 2 green onions, thinly sliced

  • ¼ cup dried cranberries (optional)

  • ¼ cup chopped walnuts or pecans (optional)

For the creamy dressing:

  • ½ cup mayonnaise

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon Dijon mustard

  • 1 tablespoon honey

  • 1 tablespoon fresh lemon juice

  • ¼ teaspoon celery seed

  • ¼ teaspoon salt

  • ¼ teaspoon freshly ground black pepper

👨‍🍳 Instructions

1. Prepare the cabbage

Remove any damaged outer leaves from the cabbage.

Using a sharp knife, mandoline or food processor, finely shred the green and red cabbage.

Place the shredded cabbage in a large mixing bowl.

Moonboot Kitchen Observation: Shredding cabbage is an excellent opportunity to reflect on life's mysteries, including why an entire cabbage costs less than a tiny bag of pre-shredded coleslaw mix.

The Department of Grocery Economics is investigating.

2. Prepare the remaining vegetables

Peel and grate the carrot.

Cut the apple into thin matchsticks, leaving the skin on for colour and texture if desired.

Thinly slice the green onions.

Add everything to the bowl with the cabbage.

If using dried cranberries or chopped nuts, add them now.

3. Make the creamy dressing

In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, honey, lemon juice, celery seed, salt and pepper.

Continue whisking until smooth and creamy.

Taste the dressing.

For a sweeter coleslaw, add another teaspoon of honey.

For more tang, add a little additional apple cider vinegar.

4. Combine everything

Pour approximately three-quarters of the dressing over the cabbage mixture.

Toss gently until evenly coated.

Add the remaining dressing as needed.

The vegetables should be nicely coated without swimming in mayonnaise.

Captain Moonboot believes coleslaw should be a salad, not a rescue operation requiring flotation equipment.

5. Chill before serving

Cover the bowl and refrigerate for approximately 30 minutes.

This allows the flavours to blend and the cabbage to soften slightly while remaining crisp.

Give the coleslaw another gentle toss before serving.

Taste and adjust the seasoning if necessary.

6. Serve and enjoy

Transfer the coleslaw to a serving bowl.

For an attractive presentation, sprinkle a few additional dried cranberries or chopped nuts over the top.

Serve chilled alongside your favourite barbecue dishes.

🌟 Captain Moonboot's Kitchen Notes

Make it economical: Substitute a 14-ounce (approximately 400 g) bag of prepared coleslaw mix for the cabbage and carrot. You'll save preparation time, although the Department of Grocery Economics may request an explanation.

Make it lighter: Replace half the mayonnaise with plain Greek yogurt. The dressing will be slightly tangier and contain less fat.

Reduce the sweetness: Omit the honey and dried cranberries. The apple provides natural sweetness.

Try a vinegar-based version: Replace the mayonnaise with 2 tablespoons olive oil and add another tablespoon of apple cider vinegar. This produces a lighter, less creamy coleslaw.

Add some crunch: Sprinkle toasted sunflower seeds or pumpkin seeds over the coleslaw immediately before serving.

Make it spicy: Add ½ teaspoon prepared horseradish or a small pinch of cayenne pepper to the dressing.

Make ahead: Shred the vegetables and prepare the dressing separately up to one day in advance. Combine shortly before serving for the crispiest results.

Storage: Refrigerate promptly in a covered container for up to 3 days. The coleslaw will gradually soften and release moisture, so stir before serving. Keep it chilled, especially when serving outdoors.

🍽️ Captain Moonboot's Serving Suggestion

This coleslaw would be particularly good alongside several existing World HQ recipes:

  • Recipe #14: Slow-Cooker Pulled Pork — pile the coleslaw directly onto the sandwich.

  • Recipe #20: Honey-Garlic Glazed Chicken Wings — a cool, crunchy contrast to the sticky glaze.

  • Recipe #22: Smoky Sausage, Potato & Cabbage Skillet — for those occasions when the Department of Cabbage Procurement has ordered far too much inventory.

  • Recipe #27: Sticky Honey-Mustard Chicken Drumsticks — an excellent combination for an easy family supper.

It also works beautifully with grilled burgers, fish or ordinary sandwiches.

🚨 WORLD HQ EDITORIAL NOTICE

The Department of Vegetable Relations has officially approved Recipe #28 for inclusion in Making Salsa: Recipes & Other Bad Decisions from Captain Moonboot.

Following an extensive review, the Department has concluded that cabbage, carrots and apples can indeed be transformed into something delicious without the addition of bacon, cheddar cheese or potatoes.

Captain Moonboot has reluctantly accepted these findings.

The Missus considers this a significant breakthrough.

Meanwhile, Toad has submitted a formal request to establish an Apple Quality Inspection Station beneath the kitchen counter.

Her proposal calls for the immediate transfer of all apple trimmings to the Canine Division.

Management has agreed that small pieces of plain apple flesh may be provided occasionally, provided the core and seeds are removed.

Toad considers this a partial victory.

However, she remains concerned that the recipe contains no meat whatsoever.

When informed that coleslaw is traditionally a side dish, she immediately requested to know what would be served beside it.

The Department of Domestic Logistics has assured her that supper will contain chicken.

Toad has withdrawn her complaint.
