Captain Moonboot's Baked Spaghetti & Meatball Casserole

Captain Moonboot's Baked Spaghetti & Meatball Casserole

Spaghetti and meatballs is already a perfectly respectable supper.

But at some point somebody looked at it and thought:

“This could use another layer of cheese and twenty minutes in the oven.”

Captain Moonboot supports this kind of forward thinking.

This is also a good make-ahead meal: assemble it earlier in the day, refrigerate it, then put it in the oven when you're ready.

⏱️ Recipe Information

Servings: 6 hearty portions
Preparation Time: 20 minutes
Cooking Time: 20–25 minutes (meatballs and spaghetti)
Baking Time: 20–25 minutes
Resting Time: 5 minutes
Total Time: Approximately 65–75 minutes

Some recipes begin with finely dice six vegetables or carefully whisk until emulsified.

This one begins with:

Put a large piece of pork in a machine and leave it alone for eight to ten hours.

At World HQ, we recognize a cooking technique ideally suited to management.

Cooking Time: 8–10 hours (slow cooker on LOW)

Eventually a cookbook called Making Salsa: Recipes & Other Bad Decisions needs a sauce that begins innocently with peaches and ends with somebody standing beside the barbecue saying:

“I may have added a little bourbon.”

This sweet, tangy, slightly smoky sauce is excellent on grilled chicken, pork chops, ribs, burgers or pulled pork. And despite the impressive-sounding name, the entire operation basically involves putting things in a saucepan and stirring occasionally.

Yield: Approximately 2 cups

Cooling Time: 15 minutes

There are sandwiches, and then there are sandwiches that require two hands, several napkins, and a willingness to accept that some of the contents will eventually end up on your shirt.

The Reuben belongs proudly in the second category.

It's a glorious combination of corned beef, Swiss cheese, sauerkraut, and tangy dressing, grilled between two slices of rye bread until everything is hot, crispy, and just messy enough to qualify as a proper meal.

And unlike many of Captain Moonboot's culinary adventures, this one can be completed in about 20 minutes, leaving plenty of time for more important activities, such as explaining to the government why you haven't received the money they already agreed to send you.

There comes a time in every respectable kitchen when somebody makes a beautiful pot of chili, sits down to eat it, and discovers there is absolutely nothing available to wipe up the last bit of sauce.

This is a serious oversight.

Fortunately, Captain Moonboot's Culinary Research Department has developed a solution involving cornmeal, cheddar cheese, jalapeños, and a cast-iron skillet.

It's called cornbread.

Apparently, somebody else invented it several hundred years ago, but World HQ sees no reason to let that interfere with our announcement.

There are people who believe preparing a delicious fish dinner requires years of culinary training, specialized equipment, and a complicated relationship with a French chef.

Captain Moonboot has investigated these claims.

Apparently, all you really need is some fish, breadcrumbs, Parmesan cheese, a lemon, and an oven.

This recipe produces tender, flaky fish beneath a golden, buttery, lemon-garlic crust. It's quick enough for a weekday supper, inexpensive compared with restaurant seafood, and requires remarkably little cleanup.

Best of all, there's no deep frying involved, which significantly reduces the likelihood of World HQ requiring assistance from the Harriston Fire Department.

There comes a time in every household when somebody discovers half a loaf of bread sitting on the counter, approaching the consistency of building materials.

Most people consider throwing it out.

Captain Moonboot considers this a failure of imagination.

Because somewhere along the way, a remarkably clever person discovered that stale bread, eggs, milk, maple syrup and a little butter could be transformed into one of the finest comfort-food desserts ever invented.

And since we're Canadians, we're legally obligated to involve maple syrup whenever the opportunity presents itself.

There are few things in life more satisfying than a plate of sticky, golden chicken wings.

Unfortunately, ordering them from a restaurant now requires approximately the same financial planning as purchasing a used automobile.

At World HQ, we've developed a more economical approach.

We buy the wings, throw them in the oven, make a ridiculously simple honey-garlic sauce, and eat them at home.

No delivery charge. No mysterious service fee. No suggested 25% gratuity.

And most importantly, nobody judges you for licking your fingers.

Well, The Missus might. But that's an entirely different department.

🎩 A Word from Captain Moonboot

Autumn has arrived at World Headquarters, and the Department of Seasonal Vegetables has issued its annual directive: find something useful to do with squash.

Captain Moonboot initially suggested using one as a doorstop, but The Missus pointed out that squash is actually edible.

After considerable negotiations, a compromise was reached. Roast it, add some apples, turn everything into a delicious creamy soup, and pretend this was the plan all along.

Toad has expressed disappointment that the recipe contains neither bacon nor cheese. Her formal complaint remains under review.

The Department of Household Economics at World Headquarters has issued another troubling report: groceries are expensive, appetites remain substantial, and nobody has volunteered to wash additional dishes.

Fortunately, Captain Moonboot has discovered that potatoes, cabbage and smoked sausage can be combined in a single skillet to produce a remarkably satisfying supper.

The Missus appreciates the simplicity. Captain Moonboot appreciates the sausage. And Toad has already positioned herself beneath the stove, convinced that gravity will eventually deliver something worthwhile.

One skillet. Ordinary ingredients. A hearty supper.

The Department of Dishwashing has declared a national holiday.

🎩 A Word from Captain Moonboot

The Department of Comfort Food at World Headquarters has determined that there are certain evenings when a salad simply isn't going to solve anybody's problems.

On such occasions, Captain Moonboot recommends beef stroganoff.

Tender strips of beef, golden mushrooms, onions and a rich, creamy sauce served over a generous helping of egg noodles. It's the kind of supper that makes you forget about the weather, the hydro bill and whatever questionable decision you made earlier in the day.

The Missus appreciates that it can be prepared in about 35 minutes.

Captain Moonboot appreciates that it tastes like somebody spent considerably longer making it.

And Toad? She's already stationed beneath the cutting board, conducting what she calls a gravity-assisted beef inspection.

🎩 A Word from Captain Moonboot

The Department of Vegetable Relations at World Headquarters has been investigating ways to encourage Captain Moonboot to consume more broccoli.

After several unsuccessful proposals involving steaming, boiling and disguising it beneath a lettuce leaf, somebody suggested adding bacon, potatoes and a generous quantity of cheddar cheese.

Negotiations concluded almost immediately.

The result is a bubbling, golden casserole loaded with tender potatoes, broccoli, smoky bacon and a creamy cheddar sauce. It's hearty enough to serve as supper and makes an excellent side dish alongside grilled chicken or pork chops.

The Missus is pleased that broccoli has finally received some attention.

Captain Moonboot is pleased that bacon received considerably more.

Toad has expressed interest in joining the Department of Quality Control, although management remains concerned about her previous involvement in unauthorized waffle transportation.
